Southwest Cuisine: An American Blend of Colorful Culinary Cultures

Native American Influence This culture held the preparation of food in high regard and sees special significance in each ingredient used. Hunting and foraging were the basis of the Native American food supply for centuries, making the process of preparation and cooking very specific to creating edible dishes out of game, berries, roots, grasses, and other vegetation. Corn was probably one of the first crops to be cultivated and became one of the most frequently used and most versatile ingredients. Both the corn husks and corn kernels were used in a variety of dishes. The juice left after scraping the kernels from the cob was used as a thickener or even a sweetener. Squash and beans were also part of the Native American diet. Because of the reliance on wild game, slow cooking, usually in deep pits dug in the ground, was a way to tenderize the tough meat. This process also was used to smoke the meat, preserving it for later use.Spanish InfluenceThere were many contributions from the regions and peoples of Spanish descent. Ranchers from Mexico and Central America brought to the southwest their cattle and sheep, and farmers from those regions came with their pigs and chickens. Because of this influx through the ages, we have dishes that include lots of meat and poultry. Because the climate in Mexico and the southwest is hot year round, preserving the meat was important. Remember, there was no refrigeration so curing the meat was a standard cooking method. Smoking or drying the meat in shreds or strips was an easy way to store it. Adding this dried meat to soups and stews was a good method for rehydrating the meat.Of course, chiles love the climate of Mexico, so using them for flavor was inevitable. To stockpile peppers, they were allowed to ripen and dry, making the red pepper one of the major contributions of this hot weather region. We know that every home in Mexico had a tortilla cooking system. This flat bread was a staple of the people and naturally made a move to the southwest region of the United States. Because the southwest is mostly land-locked, the region lost some of the seafood influence from Mexico. However, as southern California's population grew, the seafood was reintroduced, which is an authentic nod to Mexican cuisine. When you think of traditional southwest cuisine, you may be tempted to think only of tacos, enchiladas, and burritos. What may not be as evident is how many people had their hands in making this cuisine what it has become today. Like many cuisines, the modern southwestern dishes have evolved and perfected over the years. True southwest cuisine is all about infusing tasty ingredients with the heritage and cultures so important to the formation of this region. The Importance Of Spice And Color In Southwest CuisineYou probably recognize southwest cuisine first by the bold flavors and colorful flair. Each dish is created with a unique blend of spices and other special ingredients that set it far apart from any other type of cuisine. The amount of time, pride, and imagination that goes into making each dish ensures a meal that is not only a treat for your taste buds, but also a feast for the eyes. Let's take a look at what's involved in creating this sensory sensation.SpicesThe liveliness you experience in southwest cuisine is due in part to the ingredients used for flavor and color; namely, the spices. This cuisine depends on the use of chili powder, cumin, and cayenne. Chili powder will not only give the meal that bold flavor, but its brilliant red coloring makes the meal more enticing and pleasing to the eye. Cumin is used for its distinctive smoky, nutty, warm, and peppery flavor. Not exactly a 'hot' spice, cumin offers a depth of flavor that is hard to describe. But, if it's missing from a recipe, you will know it and mourn the loss. Cayenne is often added to infuse more heat in a dish, but it also offers flavor and a pretty speckling of color, especially when using the flakes rather than the powder. But, only add cayenne pepper flakes when you enjoy biting into a tiny bit of pepper that sets your mouth on fire.HerbsThe use of herbs is equally important as the use of spices in southwest cuisine. Coriander, basil, oregano, marjoram, thyme, and rosemary are all herbs you will recognize in many dishes offered in this region. If you buy a jar of seasoning labeled 'Mexican Herb Seasoning' you will most likely see this combination. Fresh cilantro is often used, as well, and even though it is the plant that coriander seeds comes from, the flavor of the plant, cilantro, differs greatly from the flavors of the seed, coriander. They are not interchangeable in recipes. You'll have to watch recipes carefully if they call for cilantro seeds they really mean coriander s

Top five seafood restaurants in Midtown Atlanta

Restaurants specializing in seafood have gained great respect over the years for their healthful nature. There is no shortage of such eateries in Midtown Atlanta—enough to accommodate whatever undersea meal in which you want to indulge. Here are the top five seafood restaurants in Midtown Atlanta.
Seafood Platter 1) Lure Lure takes pride in serving freshly caught Atlanta fish to their customers. Opened by veteran Chef David Bradley in 2006, this is also one of the best restaurants to visit for information on how seafood ingredients are handled or circulate throughout Midtown. Events often take place there in conjunction with Atlanta’s Grant Park Conservancy. The menu items only add to its charm, with such options as chilled oysters, fish & chips, and grilled rainbow trout. You can even have a chocolate peanut butter mousse cake for dessert, and more. Lure is open from 11:00 a.m. to around 3:00 p.m. throughout the week, and their bar opens daily at 4:00 p.m.
2) OceanaireLocated on Peachtree Street, Oceanaire has earned a reputation as a classy Midtown restaurant with excellent customer service. Visitors can relish seafood from different parts of the world in the Oceanaire Seafood Room. The availability for certain ingredients changes based on the time of year, however, and that means the menu is constantly changing as well. You can savor fresh king crabs or tuna, among other delicacies. Like many seafood restaurants in the area, Oceanaire opens towards the afternoon (11:30 a.m.) and stays open late into the evenings (10:00 p.m.). They also have valet parking available for $2.
3) Six Feet UnderNear Memorial Drive is the restaurant Six Feet Under. The main attractions this particular eatery emphasizes are its rooftop bar and patios, which afford customers a great view of Midtown Atlanta and beyond. They can a long list of draft beers to accompany their cocktails and undersea dishes—from crawfish to catfish. It was also recently voted one of the Top 30 American Outdoor Bars by Travel + Leisure Magazine. The selection changes on a weekly basis, but in most cases they keep their classic Chimichurri Sirloin Steak ($19). You can visit them Mondays through Saturdays from 11:00 a.m. to 1:00 a.m. (2:00 a.m. Fridays and Saturdays). On Sundays their hours are from 11:00 a.m. to 12:00 a.m.
4) RAMany restaurants in Midtown serve exotic or local seafood dishes, but RA focuses on preparing tasty sushi for their visitors. With a design inspired by different sushi bars in Tokyo, it will feel like you have stepped from the buzz of Midtown Atlanta into ancient Japan. They even feature live Japanese music. Their list of sushi is impressive, with such delicacies as the Tootsy Maki (a crab, shrimp, and cucumber mixture) or Vegetable Tempura Roll (tempura blended with asparagus and eggplant). They are open all week from 11:00 a.m. to 11:00 p.m.
5) The Steamhouse LoungeLike RA, The Steamhouse Lounge also has a specific type of seafood on which they focus: shellfish. Most of this restaurant’s dishes revolve around crabs, oysters, clams, or other creatures of the deep you might need some extra assistance to open and eat. That is what they provide the proper equipment with each meal. They also have a good selection of fine wines. Another thing that spotlights Steamhouse Lounge is the annual Oysterfest it hosts every February. This is essentially a concert celebrating, well, oysters. In addition to helping promote different seafood restaurants from all across Atlanta. They have specials on Superbowl Sunday as well. They are open Sundays to Thursdays from 11:00 a.m. to 11:00 p.m., and on Fridays and Saturdays from 11:00 a.m. to midnight. If you are looking for best seafood restaurant deals and coupons in atlanta, please do checkout our seafood coupons and daily deals page.

Penang: Buford Highway’s Intersection of Flavors - Penang Malaysian Restaurant Review

Buford Highway brings crossroads of culinary traditions from all over. It’s hard to pinpoint it as merely one form of cuisine. And just like any melting pot of flavors, the island port of Malaysia brings flavors from all over: Indonesia, China, Thailand, India, and Vietnam.Whenever you have visited those authentic Chinese restaurants and see those distinct round tables, Penang also contains those seating variations, which make it perfect for a family sharing style event. Roti Canai is one of their most popular dishes, a traditional Indian pancake that sponges up any accompanying sauce beautifully. It’s a perfect pairing with authentic chicken curry, spiced by the soaking starch of potato and succulent by the juiciness of long-simmered chicken.
Penang Malaysian Restaurant Food Most of the menu items are still written in the Malay language, a mix of Indonesian and Chinese. As a child, I still remember the strong aromatics of Rendang, a unique preparation of meat whether beef or tender lamb cuts, slow cooked and simmered in coconut milk, lemongrass, and spices of cinnamon, chili, and cloves that permeated through my grandmother’s kitchen. Penang is able to recreate all my favorite childhood dishes and even spices.
Penang Malaysian Restaurant:Roti Canai and Jackfruit Smoothie Sambal refers to a spice mixture using a traditional method of mortar and pestle. By grinding assorted chilies, you add a little soy sauce to absorb the freshly released heat by these Asian little peppers, add some minced garlic, salt and sugar: the result is a wonderful explosion of textured spices. As that saying goes, “lost in translation,” sambal isn’t a hot sauce or a chili paste because there aren’t any preservatives in it. It’s made fresh on the day of serving, and because it’s not made from expensive ingredients and used with staple ingredients, you won’t ever see it in a bottle.
Penang Malaysian Restaurant:Dining with a Malaysian Backdrop Instead you dip satay, skewered meat that’s smoky in the sambal for a nice smoky and spiced effect. Those addictive peanut butter sauces are made in the same traditional mortar and pestle way. Pair it off with a refreshing jack fruit smoothie and you’re good to go! The jack fruit accents your meal with a nice refreshing tang and tropical scent. Split a meal with Haihanese chicken that’s from a Cantonese Chinese style of cooking. Transform bland chicken with steam to make it juicy and the lightness of sesame oil, soy sauce, garlic, and sambal is irresistible. Fresh cucumber garnishes this dish and makes for a fantastic side that freshens up the garlic rice which accompanies this chicken. Visit the website and choose delivery or pick up if you want to enjoy the intersection of flavors from the comfort of your own couch.

Violette French Cuisine Restaurant Review, Atlanta GA

Oui, oui Violette. Wherever you may be in our ever expanding city, it’s worth making a trip inside the perimeter and a little bit east to eat at Violette Restaurant, right off of I-85 between Brookhaven and Decatur. Although near the highway on a main road, the dining room is situated on the other side near a wooded area in a charming setting.
Violette French Restaurant Salmon dish With a first glance at Violette and its delicate sign, you’ll know it’s not a chain restaurant. The authentic and charming stucco building, with french doors and flowering ivy arching over the doorway, stands alone and offers plenty of parking.• Style: French gourmet• Dress: Party casual to dressy• Atmosphere: Intimate, charming• Price Range: Lunch entrees range up to $14 but most are around $10, and dinner entrees range from $14 to $25• Great For: A classy lunch or dinner• Specialties: Beouf bourgignon, coq au vin, New York strip steak, and fish• Kids: Well behaved• Vegetarian options: YesIt looks to be the size of a small cafe, but its proportion is highly deceptive. Inside, along with a waiting area and full bar, is also a grand piano, two full dining rooms, extensive patio seating, plus another large solarium dining room and banquet hall. They’ve done a great job in breaking up their space to make it feel intimate no matter where you are. Big windows flank the exterior walls to bring in light and open up the view of the foliage. So it’s intimate, check, charming, check, clean and contemporary, check. How about the food? You’d better check it out for yourself.Founded in 1988 by a French immigrant, Violette established itself early as a neighborhood favorite. The original chef passed away in 2003, but the spirit of his fine cuisine was kept alive by his assistant chef, also a Frenchman, and they continue to do well with the restaurant.
Violette French Restaurant Cheese Plate We tried a host of temptations: the seasonal cheese plate, French onion soup, Caesar salad, beet & goat cheese salad, salmon filet, and three different desserts. The salads were cold, delicious, and tangy with house made dressings. The French onion soup - who knows if it even really comes from France since French toast and French fries don’t - was out of this world! Or at least out of this country. Simply. the. best. The cheese plate was very good, but not as good as Bistro VG’s with their delicate homemade rosemary crackers or Empire State South with their homemade buttermilk crackers! The cheese was good, but not terribly unusual or crazy-good, just a good solid creamy bleu cheese, a standard gouda, and a standard cheddar.
Violette French Restaurant Dessert The salmon filet, encrusted with sesame and peppercorn in a citrus soy sauce was unusual and perfectly cooked - divine. All plates were artfully presented and it was also fun to see other beautiful creations floating around the room as they were delivered to their tables. A glass of house-recommended white wine paired perfectly with the salmon.
Violette French Restaurant Inside view We saved room for dessert on purpose. Thank goodness! We tried a decent (delicious) creme brulee and melt-in-your-mouth chocolate mousse that wasn’t too sweet or too bitter. The dessert award went to the Crepe Milton - a crepe filled with chocolate mousse and vanilla ice cream. Every last bite disappeared without much effort.
Violette French Restaurant Outside view Much of the waitstaff is French, bringing to light some of the confusing idioms we tend to say in English. The waitress asked if we wanted our drinks refilled and we said, “That’s OK.” She paused for a moment and said, “That’s OK means no?” But when she came to collect our empty dessert plates and asked how everything tasted, I said sarcastically, “We didn’t like them at all.” She still laughed and understood.Last, but certainly not least, you’ll hear live jazz at Violette five nights per week. The lovely background music wafts through the restaurant creating a unique ambience, but it’s not too loud that you have to raise your voice over it. A perfect evening.Violette2948 Clairmont Road NEAtlanta, GA 30329404-633-3363http://violetterestaurant.com/Hours: Lunch Monday - Friday &nbsp
